Designed to both hold cooked foods at safe serving temperatures and proof dough with controlled heat and humidity, it’s ideal for catering, bakeries, and commercial kitchens. Insulated construction ensures consistent performance, while the clear door allows easy monitoring without heat loss. Heat 140°F to 185°F – water is optional

Water creates the humidity needed for proper yeast fermentation. High humidity (70–85%) prevents dough from drying out, supports even temperature (80–100°F), and helps achieve better rise and texture.
2.⁠ ⁠Heat/Holding Mode (Water Optional)

Water adds humidity to keep foods like meats, pasta, and rolls from drying out. Avoid water when holding crispy foods, as excess moisture can make them soggy. The water pan should remain in place to protect internal components.
